Simple Mills - Sunny Side Open Egg Sandwich



1 box of Simple Mills Artisan Bread Mix

4 large eggs

1 Tbsp water

1 tsp apple cider vinegar

1/4 cup sliced, roasted beetroot

2 Tbsp dairy-free chive cream cheese

1/4 cup mixed greens

1 large egg



  1. Preheat oven to 350F / 180C (160C Fan)
  2. Follow Simple Mills box instructions for Sandwich Loaf
  3. Place beetroot slices on a greased baking sheet and cook for 15 minutes until well-roasted
  4. Allow loaf and beetroot to cool
  5. Slice bread loaf and, smear cream cheese on two slices, followed by the greens and beetroot
  6. Prepare egg how you prefer: fried, poached or scrambled
  7. Place in between the two slices of bread and cut in half and enjoy!
