Ingredients:
1 box of Simple Mills Artisan Bread Mix
4 large eggs
1 Tbsp water
1 tsp apple cider vinegar
1/4 cup sliced, roasted beetroot
2 Tbsp dairy-free chive cream cheese
1/4 cup mixed greens
1 large egg
Instructions:
- Preheat oven to 350F / 180C (160C Fan)
- Follow Simple Mills box instructions for Sandwich Loaf
- Place beetroot slices on a greased baking sheet and cook for 15 minutes until well-roasted
- Allow loaf and beetroot to cool
- Slice bread loaf and, smear cream cheese on two slices, followed by the greens and beetroot
- Prepare egg how you prefer: fried, poached or scrambled
- Place in between the two slices of bread and cut in half and enjoy!
