1/3 cup (80ml) oil grapeseed or vegetable
1/3 cup (80ml) water
1 Tbsp Vanilla
1 box Simple Mills Vanilla Cake & Cupcake Mix (or Chocolate Muffin & Cake mix)
1-2 tubs Chocolate Frosting
1 tub Vanilla Frosting
Heat your oven to 350F / 180C (160C fan)
Whisk eggs, oil, water and vanilla in a large bowl. Add the baking mix and whisk until fully blended.
Spoon the batter into 12 lightly greased or paper lined muffin cups, filling each 2/3rds full.
Bake for 15 – 20 minutes, or until a toothpick comes out clean. If using paper liners let them cool completely to prevent the cupcakes from sticking to the paper.
Cool completely before frosting.
Allow frosting to come to room temperature.
Using a piping bag or ziploc bag with a corner cut off, pipe chocolate frosting in the shape of a football
Using a new piping bag or ziploc bag, add stitches with the vanilla frosting
