2 boxes Simple Mills Vanilla Cake Mix
5 egg whites, whipped
1 Tbsp vanilla
3/4 cup (180g) of butter / ghee, melted
3/4 cup (180ml) of coconut milk
1/4 cup (40g) of chopped pecans
1/4 cup (50g) of coconut sugar or brown sugar
1 Tbsp of cinnamon
- Preheat oven to 350F / 180C (160C Fan).
- Set aside 1 cup of mix in a separate bowl for topping
- Combine remaining mix with 113g of butter and 120ml coconut milk
- Add in whipped egg whites
- Pour into a greased 9 x13 pan
- Combined chopped pecan, reserved mix, coconut sugar, and remaining butter until a crumble forms
- Add crumble on top
- Bake for 25 minutes. Baking times may vary by appliance.
