One pack of Simple Mills Artisan Bread mix

One red bell pepper cubed

¼ cup (45g) sliced olives  

Shaved Parmesan

2 large eggs

2 Tbsp. Olive Oil

¼ cup (60ml) Apple Cider Vinegar or add to your taste preference



Preheat oven to 350F / 180C (160C Fan).

Whisk eggs, olive oil and apple cider vinegar in a large bowl. Add baking mix and combine well. Let the dough sit for 4 minutes (mix will thicken). If the dough is crumbly, add 1 tbsp olive oil and then 1 tbsp water until the dough is a thick paste.

Make two flatbreads by either using a rolling pin or moisten your fingers with water and mould the dough into the desired shape. Then move the dough onto a lightly greased baking tray.

Next, sautée one red pepper (cubed) until the pepper has perfect sear marks or about ten min, flipping often (no oil). 

Before placing in the oven top with the sautéed peppers and sliced olives. Sprinkle with shaved Parmesan and bake for 20 minutes. Cooking times may vary by appliance so monitor while cooking.
