Simple Mills - Cranberry Pistachio Chocolate Bundt Cake


1 package Simple Mills Chocolate Muffin & Cake Mix
3 large eggs
1/3 cup (80ml) water
1/3 cup (80ml) grapeseed or vegetable oil
1 Tbsp vanilla
1 cup (120grams) chopped cranberries
½ cup (75grams) + 2 Tbsp pistachio nuts
5 oz dark chocolate, melted


Preheat oven to 350F / 180C (160C Fan) and grease bundt pan.

Whisk together the wet ingredients, and stir in Simple Mills Chocolate Muffin mix until combined.

Fold in chopped cranberry and ½ cup pistachio nuts.

Pour batter into the bundt pan and bake for 30-35 minutes. Baking times may vary by appliance. A toothpick inserted should come out clean. Allow to cool before removing from the pan.

Melt the chocolate in the microwave or on stove and drizzle over the cake. Sprinkle the remaining pistachio nuts on top.
