Simple Mills - Vegan Cauliflower Bites

Ingredients:

Cauliflower Bites
1 medium head of cauliflower, cut into 2-inch florets
1 cup (240ml) water
2 cups (240g) Simple Mills Pizza Dough Mix
1/2 tsp. smoked paprika

Buffalo Sauce
1 cup (325g) apricot or mango fruit-sweetened jam or spread
1/4 cup (60ml) sriracha chile or your favourite brand of hot sauce
1/4 cup (60ml) orange juice
1/2 tsp. garlic powder

Instructions:

Prep time: 25 min - Cook time: 20 min - Serves 6

Preheat the oven to 450F / 230C (210C Fan).

Mix all breading ingredients, except cauliflower, in a bowl until blended.

Toss 5-7 florets at a time in the breading mixture with a spoon, and then place them on a silicone baking sheet and bake for 20 minutes. 

While the cauliflower bites are baking, mix all sauce ingredients in a small pot on the stovetop and heat on medium until boiling. Boil for one minute, then remove from heat.

Once the cauliflower is done baking, toss florets in the buffalo sauce with a spoon. Alternatively, place the sauce in a small bowl on the side for dipping the cauliflower bites.

Serve immediately with celery and carrot sticks, and a zesty paleo ranch or homemade blue cheese dressing.
