- 1 packet of 1.2.3 Gluten Free Chocolate Cake Mix
- 1 cup (180g) sugar
- 1 cup (250g) canned pumpkin
- ½ cup (125) applesauce
Preheat the oven to 350F/180C (160C Fan).
Line cupcake pan with cupcake liners.
Put all ingredients in mixing bowl with paddle attachment (or in a large mixing bowl and mix by hand). Thoroughly mix all the ingredients together. (Do not add any additional ingredients, this batter is thick and you might be tempted to add more liquid to thin it out, but it does not need it). Using an ice cream scoop put the batter into the cupcake liners.
Bake in the preheated oven for approximately 20 minutes, until a toothpick inserted in the centre comes out clean. Baking times may vary by appliance.
Remove and enjoy warm or cooled.
