Ingredients
1 pack 1.2.3 Gluten Free Chocolate Cake Mix
156g unsalted butter, unsalted margarine softened
150g caster sugar or sugar replacer
100g light brown sugar or sugar replacer
4 large eggs, room temperature
360ml of buttermilk
Vanilla frosting and hearts
Instructions
Preheat your oven to 175C (155C Fan), line your cupcake pans with 24 cupcake wrappers
Place the butter (or margarine) in the bowl of a mixer with a paddle attachment. Beat until creamy, approx. 2 minutes. Add the sugars to the butter and beat until fluffy, approx. 3 minutes. Add the eggs one at a time and beat until thoroughly mixed.
Add the Chocolate Cake mix and the buttermilk to the bowl and beat until thoroughly mixed. Scrape the bowl sides and bottom with a spatula. Mix again.
Spoon the mixture into the cupcake wrappers and bake until a toothpick inserted in the centre comes out clean. Baking time approximately 13-16 minutes. Please note baking times may vary by appliance.
Let the cupcakes cool in the cupcake tray for 5 minutes, then remove and place on a cooling rack until completely cooled.
Add your chosen frosting and hearts!
