Chocolate Brownie Fruit Pizza
Ingredients
1 packet of 1-2-3 Gluten Free Brownie Mix
4 large eggs, room temperature
118ml unsalted butter or margarine, softened
8 oz. gluten-free white chocolate, melted and cooled slightly
16 oz. cream cheese, softened
4 Tbsp. powdered sugar
2¼ tsp. pure vanilla extract
7 cups (700g) fresh berries (or fresh fruit of choice)
5 Tbsp. apricot jam, melted
Instructions
Brownie
Preheat oven to 340 F / 175 C (155 C Fan), spray round 23cm pan with non-stick spray
Pour mix into bowl of mixer with paddle attachment. Add eggs and butter. Mix well. Pour the mixture into your pre-greased pan.
Bake for 20-30 minutes, until a toothpick inserted in the centre comes out nearly clean. Baking times may vary by appliance.
Cool completely.
Topping
In bowl of mixer with paddle attachment, mix together melted white chocolate, cream cheese, powdered sugar and vanilla. Beat until well incorporated.
Spread chocolate/cream cheese mixture on top of cooled brownie crust.
Cover with fresh berries or fruit of choice.
Brush melted apricot jam on top of fruit. Cool before use.
Refrigerate until jam and chocolate/cream cheese mixture have set (approximately 4 hours).
Cut pizza into pieces and serve.
