1 packet of 1-2-3 Gluten Free Pan Bar Mix
3 Eggs, room temperature
180ml ripe mashed Banana for the mixture
1/3 cup (85g) Natural Greek Yoghurt
1/3 cup (80g) Vegetable OIl
½ cup (100g) Brown Sugar
4.5 Tbsp (60g) Unsalted Butter cut into cubes
4 medium Bananas chopped into disks
Preheat your oven to 350F / 180C (160C Fan)
Use a 8 x 8 x 2 inch square cake pan or 9 x 2 inch round cake pan.
Spread the brown sugar on the bottom of the cake pan and then scatter the butter cubes on the bottom. Place the cake pan in the oven for around 7-10 minutes until the butter has melted. Remove and stir the sugar and butter mixture together then spread evenly over the bottom of the cake pan, then cover the bottom of the cake pan with the chopped banana disks, then set aside.
Pour the 1-2-3 Gluten Free Pan Bar mix into a mixing bowl. Add the eggs, yoghurt, vegetable oil and mashed banana to the mix and blend thoroughly.
Pour the mix over the chopped bananas making sure you get an even spread.
Bake for 35-45 minutes, until a toothpick inserted in the centre comes out clean. Please note baking times may vary by appliance.
Allow the cake to cool thoroughly in the pan and then turn out onto your serving plate.
Top with cream or ice cream and enjoy!
