1 box of 1-2-3 Gluten Free Yellow Cake Mix
1 cup (240g) unsalted butter/unsalted margarine, softened
1 cup (200g) sugar
4 large eggs, room temperature
3/4 cup (265g) honey
½ cup (120ml) cool black coffee (you can use instant if you don't have brewed coffee)
2 tsp. cinnamon
2 tsp. ginger
2 tsp. allspice
Preheat oven to 325F / 160C (140C Fan). Generously spray 9" x 13" pan with non-stick spray.
In bowl of mixer with paddle attachment, place butter and sugar. Beat well until creamy and thoroughly mixed. Add eggs, one at a time, beating after each addition. Add honey and mix well.
Add Yellow Cake Mix, spices and coffee. Beat well. Scrape down bowl and beat again to ensure all ingredients are thoroughly mixed together.
Pour batter into the pan. On middle rack of your oven, bake for approximately 45 minutes to 55 minutes, until toothpick inserted in centre comes out clean.

Cool, cut and serve.
