1 pack 1.2.3 Gluten Free Yellow Cake Mix
232g unsalted butter, unsalted margarine softened, or dairy free margarine
200g caster sugar or sugar replacer
6 large eggs, room temperature
160ml of milk or milk substitute
Chocolate or vanilla frosting, sprinkles and hearts
Preheat your oven to 175C (155C Fan), line your cupcake pans with 24 cupcake wrappers
Place the butter (or margarine) and the sugar in the bowl of a mixer with a paddle attachment. Beat until light and fluffly. Add the eggs and beat well.
Add the Yellow Cake mix and milk (or milk substitute) to the bowl. Mix until smooth. Scrape the bowl sides and bottom with a spatula. Mix again until light and fluffy. (approx. 3 mins).
Spoon the mixture into the cupcake wrappers and bake until a toothpick inserted in the centre comes out clean. Baking time approximately 15-18 minutes. Please note baking times may vary by appliance.
Let the cupcakes cool in the cupcake tray for 5 minutes, then remove and place on a cooling rack until completely cooled.
Add your chosen frosting, sprinkles and hearts!
