Yields: 25 Monster eyeballs 

Ingredients

For the eyeballs:

3 eggs

1/3 cup (80 ml) water

1/3 cup (80 ml) oil

1 tablespoon vanilla

1 box Simple Mills Vanilla Cake Mix

1 cup (400 grams) Vanilla Frosting, divided

For the coating:

1 cup (208 grams) palm shortening

¾ cup (180 ml) coconut butter

1¾ cups (175 grams) powdered sugar, sifted

Natural Dye

For the pupils:

25-30 chocolate chips

Instructions

Preheat oven to 350F / 180C (160C Fan)

Make the cake pops: Grease an 8x8-baking dish and line with parchment paper.

Whisk the eggs, water, oil and vanilla in a large bowl, then add the baking mix and stir until combined.

Bake for 25-30 minutes or until toothpick comes out clean. Cool in pan 10 minutes and then place onto cooling rack.

Cool cake completely and place in large bowl

Crumble cake with your hands and mix in ¾ cup (300 grams) of vanilla frosting until thoroughly combined

Using a tablespoon, scoop out batter and roll the dough into balls.

Melt the remaining ¼ cup (25 grams) of vanilla frosting

Dip cake stick in frosting, stick it in the cake balls, and place on a baking sheet lined with parchment paper (stick end up).

Repeat until all the dough is gone and place in freezer.

Make the coating: Place the palm shortening in a large bowl and mix on high until mixture is light and fluffy.

Add melted coconut butter and beat until fluffy

Add powdered sugar and beat until frosting is light and airy (3-5 minutes).

Divide coating into 3 bowls but reserve about ½ cup for the white irises.

Among the 3 larger bowls, mix in your preferred natural dye colour

Remove the cake pops from the freezer; working quickly and gently, roll the pops in the coating and place back on the pan with the stick end facing up. Repeat until finished and place in fridge to set for about 15-20 minutes.

Place the ½ cup of white left over in a piping bag (or ziploc bag with corner cut) and then carefully put a large circle of white frosting in the middle of the cake pop, then place a chocolate chip in the middle with the flat end facing outward

Repeat until all the cake pops are decorated and return to refrigerator. Remove from refrigerator a few minutes before eating.

 

Notes:

- If the cake pop mixture is not rolling in to balls easily than add a bit more frosting.

- The coating will start to set after a time. If you find that it is setting before you are done decorating, place it back in the mixer and beat on high for several minutes.
